BBQ bacon chicken pizza

For the BBQ sauce
Coconut oil
Dried minced onions
2 cloves garlic, grated
1-6 oz can tomato paste
1/2 cup apple cider vinegar
1/3 cup water
1 Tbs stone ground mustard (the kind in a jar look for it by the yellow mustard in the grocery store)
Onion powder to taste
Salt and pepper to taste
A few dashes of cayenne pepper
A dash of cinnamon
A few splashes of hot sauce

For the cauliflower crust
1 1/2 lb frozen cauliflower florets
2 eggs
Onion powder to taste
Garlic powder to taste
Smoked paprika to taste
A few dashes of cayenne pepper
A dash of mustard powder
Salt and pepper to taste

For the toppings
3 large chicken breasts (I would actually use 4 but I only had 3 on hand) seasoned with the following: olive oil, onion powder, garlic powder, smoked paprika, salt, black pepper, cayenne pepper, mustard powder, cinnamon, and hot sauce
1/2 red onion sliced thin
10 or so slices cooked crispy bacon crumbled

This recipe uses a jenny-fied version (that is pretty much the same) of juli bauers recipe (from paleOMG) for paleo BBQ sauce. To make it, heat up a small sauce pan and toss a tablespoon or two of coconut oil and melt it over medium low heat then add enough minced onions to fill the bottom the of the pan in a single layer. Brown the onions then add the garlic. Once the garlic becomes fragrant add the rest of the ingredients and reduce heat to low. Stir to mix well. Heat on low for about 10-15 minutes stirring occasionally. Taste and adjust seasonings to your liking. Set sauce aside to cool.

Preheat oven to 375 degrees.
Put the chicken in a bowl and drizzle with olive oil. Add seasonings to your liking. I used about the same amount of the garlic powder, onion powder, smoked paprika and salt. More is better than less is my motto. I only put a few dashes of the cayenne, mustard powder and cinnamon. I just put a few splashes of hot sauce. Mix everything up with your hands until evenly coated. Bake in 375 degree oven for about 20 minutes until internal temperature reaches 165. Cover with foil for about 5 min then remove and let cool. Turn up oven to 400 degrees.

To make the crust, heat your frozen cauliflower then finely chop by hand or in a food processor. Add to bowl with eggs and seasonings. Mix well. Spread on baking sheet and bake at 400 degrees for 10-15 minutes until a little brown on edges and/or on top.

Cut chicken into bitesize pieces and toss with BBQ sauce. Cover crust with chicken, bacon and onions. Put back into oven for about 10 minutes. Let cool a bit before serving. Enjoy!
