Stir fry vegetables 2

Lately I’ve been doing my stir fried vegetables really simple with just oil, salt and pepper. I usually serve it with cauliflower rice and stir fried almonds. You can use whatever veggies you like. I like this combination because everything takes about the same time to cook.

Serves 8-9

Ingredients
1-2 yellow onions
1/2 head of celery
1 lb carrots
1-2 bell peppers
2 or so Tbs coconut oil
Salt and black pepper, to taste

Instructions
Slice onions.
Rinse, dry and chop celery any way you like.
Peel and chop carrots anyway you like.
Rinse, dry and chop bell peppers anyway you like.
Heat oil in large skillet over medium heat and add veggies, salt and pepper.
Stir to coat everything in oil and seasoning.
Let cook down until softened to your liking stirring occasionally.
Serve alone or as a side dish.
