I was really hungry after my evening WOD and realized on the way home I never fully developed my meal plan for tonight. So I had to work on the fly. This is what I came up with. It was really good. It’s not really a recipe- it’s just food!
1 lb ground beef
1 lb chorizo
Salt and pepper
Hear pan over medium high heat and brown meat together at the same time in the same pan making sure to season the beef with salt and pepper before you mix the two together
Cut sweet potatoes in half lengthwise (I don’t know how many I only made one serving for myself-I’d guess about 2-3)
Heat face down in a covered dish in the microwave until soft, about 7-10 minutes
Remove skin and smash sweet potato them top with fully cooked meat and then with sliced avocado
Grab and fork and eat it!
