BBQ chicken burgers

I realize I haven’t posted in a week. However, life has been crazy busy. I have been cooking everyday though and made a lot of new things. So more posts will come when I can get the chance to post. Today’s post is a BBQ chicken burger with crispy sweet potato fries. I have to say this was really good. Especially the BBQ sauce. I dipped my fries in it too. Just a really good meal.

Ingredients for the burger
1 lb ground chicken
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1/4 cup BBQ sauce
Coconut oil for cooking

Ingredients for the BBQ sauce
1-6 oz can tomato paste
1 small yellow onion
1/2 cup apple cider vinegar
1/3 cup water
1 Tbs bottled ground mustard
2 garlic cloves
1/2 tsp cayenne pepper
1/4 tsp cinnamon
Salt and pepper to taste
A few splashes of hot sauce

Ingredients for the fries
1 sweet potato
Coconut oil
Salt and pepper to taste

Instructions
Preheat oven to 400 degrees
Start with fries by cutting sweet potato into really thin fries (the thinner fries become more crispy)
Then, toss and coat fries with oil and salt and pepper
Spread fries in a single layer on a cookie sheet and bake for 12 minutes then turn fries over and cook 10 minutes until golden and crispy
While fries are cooking, make the BBQ sauce
Heat a saucepan with some oil then brown the onions
Add the garlic and stir about 30 seconds
Then add and stir in the rest of the ingredients
Simmer and stir for about 10-15 minutes
Then mix all the ingredients for the burgers in a bowl and make patties
Cook burgers in a hot skillet over medium heat 8 minutes a side
Serve burgers with fries and BBQ sauce
