Stir fry vegetables

This side dish was inspired by my almond chicken stir fry.

3 Tbs coconut oil
Toasted Sesame oil
Tamari sauce
Ginger to taste
Salt & pepper to taste
1 sweet potato
1 bell pepper
2 large handfuls broccoli slaw
2 handfuls almonds

Dice sweet potatoes
Diced bell pepper
Heat a large skillet over medium heat and add oil and a splash of sesame oil and tamari sauce
Add sweet potatoes, a sprinkle of seasonings, and stir occasionally until they begin to soften
Add bell peppers and more oil if pan is getting dry plus a little more of the seasonings
When bell peppers begin to soften, add the broccoli slaw and more oil if needed and stir it around a bit until it softens plus add some more seasonings
Remove the vegetable with a slotted spoon when cooked to your liking
Add more oil if needed to pan and almonds and stir fry 2 minutes or until golden then pour over veggies and serve as a side dish 🙂
