Almond stir fry chicken

This is a Jenny original. Enjoy!

Ingredients
2-3 lbs chicken breasts, cooked and diced
1/2 cup almonds
5 Tbs coconut oil, divided
1-12 oz bag broccoli slaw
2 handfuls shredded carrots
2 handfuls sliced mushrooms
1 red bell pepper
1 yellow onion
2 green onions
1 clove garlic
1 inch knob ginger
2.5 Tbs wheat free tamari sauce
1.5 tsp toasted sesame oil
Salt and pepper to taste

Instructions
Chop bell pepper
Slice yellow onions
Mince green onions
Mince garlic
Add 3-5 tablespoons of coconut oil to a medium stockpot and heat over medium heat
Add almonds to hot oil and stir fry for 2 minutes until golden then remove with a slotted spoon and set aside
Grate ginger into the pot
Add tamari sauce and sesame oil
Add bell pepper and onions to pot
When they start to soften a little add broccoli slaw, carrots, mushrooms and garlic
Add salt and pepper and mix well
Add more coconut oil if pot gets to dry when cooking veggies
When veggies are softened to your liking, add cooked salted and peppered chicken along with almonds and green onion then stir to combine
Serve and enjoy!
