Tuscan meatballs

This is a take on my friend Moe’s meatball recipe. It’s super garlicky and yummy 🙂

1.25 lbs beef
2 Tbs tomato paste
2 tsp balsamic vinaigrette
Garlic powder to taste
Salt and pepper to taste
Coconut oil
1 clove garlic
1 handful spinach

Preheat oven to 375 degrees
Heat a saucepan over medium-low heat and add a little coconut oil
Mince garlic while pan is heating
Add garlic and stir until fragrant; remove from pan and add to bowl
Add tomato paste, balsamic vinaigrette and salt and pepper to taste to saucepan
Stir and heat mixture about 5 minute then allow to cool and add to bowl
Chop spinach and add to bowl
Add meat to bowl and add garlic powder, salt and pepper to your liking
Mix everything together and form into meatballs
Grease a baking dish
Bake meatballs in a baking dish for about 15 minutes
Keep an eye on the meatballs and shake every so often for even cooking
Meatballs are done when internal temp reaches 165 degrees
