Beef stir fry

Oh my this is like my new fav recipe! This is my first take on one of nom nom paleo’s recipe. And I am so happy with the results. The true test will be how it tastes leftover, but I have a feeling it will be even better! Also, this is a super easy, quick, one skillet recipe!

1.25 lb ground beef
1 yellow onion
5 oz sliced crimini mushrooms
1 clove garlic
1 inch knob of ginger
1 Tbs wheat-free tamari sauce
1 Tbs apple cider vinegar
1 tsp fish sauce
1 Tbs coconut oil
2 handfuls spinach
2-3 stalks of green onion
Garlic powder to taste
Salt and pepper to taste

Finely chop onions
Peel ginger with spoon
Peel garlic
Chop green onions
Heat skillet and add coconut oil
Add yellow onions to heated oil, sprinkle with a little salt and pepper (you will add more each layer so go easy) and cook until softened
Add mushrooms and cook until softened then add a little more salt and pepper (there is still more to add so go easy)
Add meat and more salt and pepper and some garlic powder to taste stirring well as meat cooks to break it up
Grate garlic clove and ginger into skillet and mix well
Add tamari sauce, vinegar and fish sauce and mix well
Add spinach and green onions and stir until spinach is wilted
Taste and adjust seasoning as needed
