Sweet potato wedges and guac

This is my take on paleomg’s grilled chili-lime sweet potato wedges and grilled bacon guacamole. It is super delicious! Omg I have to make this again!


For the wedges:
1 large sweet potato
2 Tbs coconut oil
Juice of 2 limes
1 Tbs chili powder
1 pinch cayenne pepper
Salt and pepper to taste

For the guac:
2 avocados
Juice of 2 limes, divided
Olive oil
1/4 onion
1 garlic clove
1 red chili pepper
2 pieces of cooked bacon
1 small handful cilantro
1 tsp garlic powder
1 pinch cayenne pepper
Salt and pepper to taste

Place sweet potatoes in a pot and cover with water then cook over medium heat until soft, them remove from water and let cool
When cool, cut into wedges and toss with the oil, lime juice, chili powder, cayenne, salt and pepper
Cook your bacon (or grab some leftover bacon like I did)
Dice onion small
Mince garlic
Finely chop chili pepper
Dice cooked bacon
Roughly chop cilantro
Cut avocados in half and remove seeds leave skin on
Sprinkle the juice of 1/2 a lime on the avocados and brush with olive oil
Grill sweet potatoes on top rack over high heat for 6 minutes then turn and add avocados to grill; grill 7 minutes
Remove skins from avocados add to bowl with the juice from the remaining limes, the bacon, onions, cilantro, garlic, chili pepper
Sprinkle a pinch of cayenne, 1 tsp garlic powder and some salt and pepper
Mix everything in the bowl well making sure to smash avocados
Seve guac with sweet potatoes!
