Egg Cupcakes

12 eggs
1/2 of 1 green onion
1/2 of 1 zucchini
1 handful of spinach
1/3 a jar of roasted red and yellow peppers
6-8 slices of bacon
salt and pepper
1 avocado

Preheat oven to 350
Grease two muffin pans
Whisk all your eggs together
Chop green onion, zucchini, spinach and bell peppers and add to egg mixture
Add 1/2 t salt n 1/4 t pepper to the egg mixture
Mix the egg mixture well
Fill the muffin pans with 1/4 C egg mixture (you’ll be able to make 18-20 cupcakes)
Bake for 20-25 minutes or until the eggs are set in the middle
Serve with sliced avocado
