Salmon & broccoli with guacamole

Here’s a simple one. Kinda pricey for the fish but its a nice meal every once in awhile.

Ingredients

1.5 lb salmon
1 Tbs Olive oil
1/2 tsp siracha sauce
1 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
Salt and pepper to taste
1 avocado
Juice of 1 lime, divided
1 clove of garlic minced
1 cup broccoli

Instructions

Preheat oven to 450 degrees
Place salmon skin side down in baking dish
Slather salmon with olive oil and siracha sauce
Sprinkle with seasonings
Bake salmon for 12-15 minutes
While salmon is baking, make guacamole by smashing insides of avocado in a bowl with a fork, squeezing lime juice over avocado, sprinkling with salt and pepper to taste, stirring in minced garlic and mixing well
Also, make broccoli while salmon is cooking by placing pieces of broccoli in microwave safe bowl with a little water, cover bowl and microwave 2-3 minutes until soft
Serve salmon without skin, topped with guacamole and broccoli on the side
