Creamy seafood bake

This is based on a seafood enchilada recipe from my friend Kristen McClenehen. I hope you enjoy it.


1 lb flaked crab
1 lb cooked shrimp
1 onion, sliced
1 Serrano chile pepper, minced
1 clove garlic, minced
1 tsp chili powder
1/2 tsp Cumin
1/2 tsp Oregano
1 lime, zested and juiced
Salt and pepper to taste
1 green bell pepper, diced small
1 sweet potato, cooked and diced small
4 Tbs irish butter
1 can coconut milk


Preheat oven to 375
Dice sweet potato into small pieces and place in microwave safe bowl with a little water
Cover and microwave for about 7 minutes, until soft
Slice onion
Mince Serrano chile pepper
Mince garlic
Dice green bell pepper
Zest then juice lime
Remove tails from shrimp
Mix crab, shrimp, onion, garlic, Serrano, spices, bell pepper and sweet potato in a bowl
Melt butter over medium heat in a saucepan and mix with coconut milk and let simmer until warm and season with salt and pepper to taste
Pour sauce over meat mixture and spread in baking sheet
Bake in 375 degree oven for about 20-30 minutes or until hot and bubbly

I made and ate this tonight for the first time and it was delightfully delicious! I forgot the Serrano pepper but it was good without.
