These go with burgers, steaks, eggs, or pretty much anything.
1 sweet potato (if using smaller ones do two, if its really big use half you want about a cup and a half of chopped sweet potatoes)
1-2 Tbs olive oil
1-2 Tbs homemade taco seasoning (recipe below)
Chop the ends of the sweet potato off. Cut the sweet potato into half inch thick coins. Cut the coins into 2-3 strips in one direction and them turn and cut the opposite way to create bite size pieces of potatoes.
Put in a medium mixing bowl and drizzle 1-2 Tbs olive oil over them mixing until well coated.
Sprinkle with taco seasoning and mix until well coated. (I try to get them pretty coated but not too caked with seasoning.)
Put in a stoneware dish like corning ware or pampered chef. (If you don’t have it use your oven. I’ve only ever tried this in these type of dishes)
Microwave for about 6-8 minutes until your desire softness
Note: You can use any seasoning you like with this recipe. The measurements are to estimated to my taste and preferences. The time varies based on microwave, size of potato pieces, and amount of potato pieces. Try it out and adjust the seasonings and times to your taste and preference. If you need to use your oven, preheat it to 400 degrees and bake for about 20 minutes turning halfway through for even browning. You could even BBQ these wrapped in foil and turning over halfway through cooking. They’re done when soft (about 15 minutes). The oven and BBQ make the outside crispy and good!
1/4 cup chili powder
1/2 cup onion powder
1/4 cup cumin
2 Tbs garlic powder
2 Tbs paprika
2 Tbs salt
Add all ingredients in a ziplock bag (or jar if you have it) and shake well. You can pair down the recipe. This is doubled from the original since I use it so fast. You will only use 1-2 Tbs per batch of potatoes so you’ll have leftovers.
