Paleo pizza

Serves 4

For the crust
1 bag frozen cauliflower
1 cup shredded parmesan cheese, divided
2 eggs
2 tsp oregano
2 tsp basil
2 tsp parsley
For the toppings
1/2 lb pepperoni slices
1 lb ground meat
1 cup black olives
1 bell pepper
1/2 tsp oregano
1/2 tsp basil
1/2 tsp parsley
Pinch of red chili pepper flakes
For the pizza sauce
1-8 oz can tomato sauce
1 tsp granulated garlic
1 tsp onion powder
1 tsp oregano
1 tsp oregano
1 tsp basil
1 tsp parsley
1/4 tsp salt
1/8 tsp pepper

Preheat oven to 400 degrees
Put frozen cauliflower pieces in microwaveable bowl and microwave for about 5 minutes until softened to your liking
Whisk two eggs in medium bowl
Add 2/3 cup of the cheese, 2 tsp basil, 2 tsp oregano and 2 tsp parsley and mix
Blitz cooked cauliflower in food processor or finely chop
Add chopped cauliflower to egg mixture and mix well
Spread cauliflower mixture on cookie or pizza sheet
Bake in 400 degree oven until it starts to brown on top (about 15 minutes)
Heat large skillet
Add meat to skillet and brown
Heat sauce pan
Add tomato sauce, 1 tsp granulated garlic, 1 tsp onion powder, 1 tsp oregano, 1 tsp oregano, 1 tsp basil, 1 tsp parsley, 1/4 tsp salt and 1/8 tsp pepper to sauce pan and stir well
Heat sauce thru
Chop bell pepper
Slice olives
Spread sauce on baked cauliflower crust
Top pizza with pepperoni slices, browned meat, bell pepper, sliced olives
Sprinkle pizza with herbs and remaining cheese
Put pizza in 400 degree oven for 10 minutes or until toppings are hot and browned to your liking
Sprinkle pizza with a pinch of crushed red pepper flakes and let pizza cool a bit before cutting and serving with salad

Note: the pizza “crust” is super soft, so it is best eaten with a fork
