Paleo Chicken Parisian & white wine quinoa

Serves 4

For the chicken:
2 lbs chicken
1 or 2 Tbs olive oil
1 tsp Garlic powder
1 tsp onion powder
Salt and pepper to taste (for the chicken)
2 Tbs irish butter
1 small yellow onion
3 handfuls sliced mushrooms
1 clove garlic
1 cup coconut milk
1/4 cup white wine
Salt and pepper to taste (for the sauce)
2 cups broccoli
For the quinoa:
1 cup quinoa
1 cup white wine
1 cup chicken broth
1 clove garlic
1 small onion
2 Tbs olive oil
Salt and pepper to taste

Start with the quinoa:
Mince garlic
Chop onion
Heat large pot
Add oil
Add onions to soften then garlic when almost soft and cook until garlic is fragrant
Lower heat
Add quinoa to pot and stir around in oil, onions and garlic for 2 minutes
Add salt and pepper
Add cup of wine and broth salt and pepper and stir it up
Bring heat up to medium
Cover and let cook for about 20-25 minutes or when soft
Drain if liquid remains
While the quinoa is cooking, make the chicken:
Chop onion
Mince garlic
Heat medium pot over medium heat
Add butter and heat
Add onions and mushrooms to soften and brown them by letting them sit for a full minute then stir then sit again for a minute until mushrooms are soft and brown
Add garlic and stir until fragrant
Add 1/4 cup white wine and 1 cup of coconut milk and lower the heat
Stir the sauce occasionally and allow to thicken while you cook chicken
Heat pan over medium heat
Add olive oil and heat
Season chicken with garlic powder, onion powder, salt and pepper
Add chicken to pan and cook on both sides turning often until internal temperature is 165 degrees
Serve the chicken over white wine quinoa with sauce on top
