Coconut ginger mushroom chicken

Serves 4

2 lbs chicken breast
1 can coconut milk
1.5 Tbs freshly grated ginger
1 Tbs dry ground ginger
1/2 pkg sliced mushrooms
2 garlic cloves, minced
1/2 yellow onion
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste
3-4 Tbs olive oil

Dice onions
Pound chicken breasts to desired thinness
Heat pan over medium heat
Add 2-3 Tbs olive oil
Add onions and mushrooms to hot oil
Cook until softened
Reduce heat to low and add coconut milk
Grate in fresh ginger
Add dry ginger, salt and pepper
Cover and let cook while you do chicken
Heat pan over medium heat
Mix garlic powder, onion powder, salt and pepper together
Season chicken on one side with about half the seasoning
Add oil to pan and let heat up a bit
Add chicken seasoned side down and season other side with remaining seasoning
Cook chicken until 165 degrees internal temperature turning every 3-4 minutes
Serve sauce over chicken and enjoy this seriously good creation from my buddy Juli
