Supreme pizza pasta

Serves 4

1 spaghetti squash
1 medium sweet potato
1/2 yellow onion
1/4 cup olives
2 bell peppers
1-2 large cloves of garlic
1.5 lb sausage (I made my own “sausage” from ground pork mixed with 1 tsp oregano, 1 tsp basil, 1 tsp parsley)
1-14 to 18 oz can of tomato sauce (or your favorite pasta sauce- my favorite is trader joes traditional marinara sauce)
2 to 4 Tbs coconut or olive oil
Salt and pepper to taste

Cut spaghetti squash lengthwise, remove seeds, and heat for 8-9 minutes in microwave
Chop sweet potato
Chop 1/2 onion
Slice olives
Dice bell peppers
Mince garlic
If making your own “sausage” mix meat n seasonings (oregano, basil, thyme, parsley, salt n pepper)
If using pre-made sausage cut it up or remove casings to crumble in pan
Heat sauce in microwave until hot (about 5 minutes)
Scrape “noodles” out of spaghetti squash
Heat a large pot on medium heat
Heat 2 Tbs coconut oil (or olive oil)
Add sweet potatoes to pot and stir occasionally to soften and brown them keeping an eye on them do they don’t burn
Reduce heat if potatoes are browning too much
Add more oil if needed
When the sweet potatoes begin to soften up some (about 15 to 20 minutes), add onions to soften
Add more oil if needed
Add garlic cook 1 min
Add olives and bell peppers to soften
Add n brown sausage
Salt and pepper everything to taste (I added 3/4 tsp of salt and 1/4 tsp pepper when I put in the meat)
Add noddles and sauce and heat thru
Serve and enjoy!

Note: I’ve tried this with ground chicken and it was good, but it was really good with ground pork! This is a meal in it self! No sides needed. Adapted from Virginia is for hunter and gathers.
