Breakfast in a cup

4 servings

1 medium sweet potato
1/2 jar roasted bell peppers
1/2 onion
10-12 eggs
1-2 Tbs olive oil
Salt and pepper to taste

Preheat oven to 400
Grate one medium sweet potato
Chop 1/2 jar roasted bell pepper
Chop 1/2 onion (any color)
Whisk 10-12 eggs together
Spread sweet potatoes over cookie sheet and coat evenly with olive oil n salt n pepper to taste
Put potatoes in 400 degree oven until golden brown and delicious about 10 minutes turning often to make sure it’s not burning
Heat a large skillet
Add olive oil to skillet
Add onion to skillet to soften add bell peppers when onions are almost as soft as you like then
Add whisked eggs to skillet and scramble to desired doneness
Add salt and pepper taste to eggs
Put sweet potatoes in bottom of a coffee mug, add egg veggie scramble on top

Note: this was not my favorite. Probably is best eaten on a plate. This was adapted from Bobby Deans recipe from not my mamas meals.
