Southwestern meat cupcakes

Olive oil for greasing pan
3 bell peppers
1 small red onion
2 tbs chili powder
2 tsp smoked paprika
2 tsp cumin
1 tsp salt
1/2 tsp pepper
2 Tbs olive oil
2 eggs
3 lbs ground meat of choice
1.5 cups almond flour
4 Tbs hot sauce

Preheat oven to 400 degrees
Grease cupcake pans with olive oil
Cut 3 bell peppers into small pieces
Chop 1 small red onion
Mix 2 tbs chili powder, 2 tsp smoked paprika, 2 tsp cumin, 1 tsp salt, 1/2 tsp pepper
Mince two large cloves of garlic
Whisk 2 eggs
Heat pan over medium low heat
Add 2 tbs olive oil
Add garlic
When garlic is fragrant add onions and bell peppers and soften them
Put meat in bowl sprinkle with spice mix, sprinkle 1.5 cups almond flour, add 2 whisked eggs, add 4 tbs hot sauce, add softened veggies n mix well
Divide into cupcake pans
Place in 400 degree oven for about 15 min or until internal temperature reaches 165 degrees

Note: This recipe was adapted from paleomg and was originally a meatloaf. You could bake it in bread loaf pans of you have em and make a meat loaf instead if you like.
