Paleo Pancakes

Serves 2-3

400 mL (about 15 oz) whole egg/egg white combo- I used 4 whole eggs and 6 egg whites
Two scoops vanilla iso-100 protein (I got mine at max muscle)
1 tsp cinnamon plus more for sprinkling
Cooking spray (I used trader joes coconut oil spray)
Irish butter

Heat skillet or griddle to medium heat
Add eggs to bowl and whisk. Whisk in protein and cinnamon for about two minutes (I used my kitchen aid stand mixer)
Add more cinnamon on top
Pour in pan and cook for about two minutes a side adding more cinnamon to each side
Slather with Irish butter and sprinkle some more cinnamon on top
Enjoy!

Note: This one is adapted from my friend Stacia. I love it and it kept me going for hours from all the protein. I ate it with a side of sausage. Delicious!
