Chili fries

Chili fries with bell peppers and asparagus

Serves 6

3 medium sweet potatoes
3 Tbs Olive oil
Salt n pepper to taste
2 bell peppers
1 onion
3 cloves garlic
2 Tbs chili powder
1 tsp cayenne pepper
1 pinch red pepper flakes
2 tsp cumin
2 tsp oregano
1 lb ground beef
1 lb ground buffalo (you can use whatever meat you like- this is what I had)
1-28 oz can diced tomatoes
2-12 oz tomato paste
3 cups vegetable broth
Salt and pepper to taste
4 Tbs coconut oil
1-2 Avocados

Preheat oven to 400 degrees
Cut your sweet potatoes into fries
Drizzle and toss your potatoes with olive oil and season with salt and pepper
Spread potatoes on non-stick baking sheet in a single layer and bake 20 minutes flipping fries over halfway through
Chop bell peppers
Chop onion
Mince garlic
Mix 2 Tbs chili powder, 1 tsp cayenne pepper, 1 pinch red pepper flakes, 2 tsp cumin, and 2 tsp oregano
Heat a large stock pot
Add meat, bell peppers, onions and garlic and soften veggies while browning meat
Drain unhealthy fat and add back in about 2-4 Tbs coconut oil until meat tastes moist
Add seasoning mix, tomatoes, paste, broth and salt and pepper to taste stirring in well
Let simmer about 20 minutes until hot thru
Slice avocados
Serve chili over a bed of your fries with sliced avocado on top

Note: This is a delicious recipe that will make anyone jealous who smells it and can’t eat it (like my co-workers- hehe!) And it’s just good comfort food! Adapted from paleomg.
